Fresh Sardines

If you urgently need a good dosage of Omega-3 in your body, go ahead and buy a can of sardines (and of course, eat it). But take note that since canned sardines are "processed", some of the "nutrition" of the pieces of fish they contain may have already depleted. If it's a "real big" amount of Omega-3 that you need, go for fresh sardines. Find some in the market.

Now, if you luckily found some being sold in the market, don't forget to cook them in that very same day. Well, this is not because we're predicting that you'll be having a heart attack later but because sardines do not freeze well. The oils in them turn rancid even in a freezer, and the flesh becomes a mushy mess when thawed. You don't want a fish that's thawed!

The best way to cook your fresh sardines aside from turning them into a Stargazy pie, is grilling them. Fresh sardines are best wrapped in grape or fig leaves and grilled over charcoal with olive oil and lemon.

Fresh sardines are also good filleted. When you fillet the fish, you can add a bunch of full-flavoured sauces with it like the traditional tomato sauce.
